Shepherds Pie

My husband has been asking me to make shepherds pie for some time now so today when I was at Costco, I decided to buy a huge package of ground beef and make it for him! I got a 6-lb. package of ground beef, which was huge, so I decided to make two different meals out of it. My wonderful husband browned all the beef for me in a wok, while I chopped up 3 lbs. of carrots, 2 celery hearts and 6 yellow onions! Once the beef was cooked, we strained off all the fat and added all the chopped up veggies. At this point I divided half of this beef mixture into 4 dishes that I then froze and will use for spaghetti sauce on busy weeknights! Here is how I made the shepherds pie:

approximately 3 lbs. ground beef
2 cups carrots, chopped and microwaved with a splash of water for about 4 minutes
1.5 cups celery, chopped
3 yellow onions, chopped
6 cloves garlic, minced
1-5.5 oz. can tomato paste (I used garlic flavour)
1.5 cups tomato sauce
a few dashes of Worcestershire, to taste
2-3 tbsp. Italian seasoning
salt and pepper to taste
a few bay leaves & sprigs of thyme

boiling potatoes, amount depends on how much you are planning on eating
1% milk
garlic, thyme, salt and pepper, to taste
sharp white cheddar

Cook the ground beef thoroughly and remove any excess fat from the pan. Add all the chopped vegetables, garlic, tomato paste and tomato sauce. Stir to combine. Add Worcestershire, Italian seasoning and salt and pepper, taste and adjust accordingly. Add bay leaves and thyme sprigs and simmer over low heat for 20-30 minutes.

While the beef mixture is simmering, peel and chop potatoes and add to a pot filled with water. Bring to a boil over high heat, and boil until the potatoes become fork tender. Once tender, strain the potatoes and add them back to the pot. I added enough 1% milk to make the potatoes super creamy as I mashed them. I then added some garlic, thyme and salt and pepper, to taste.

Once the beef mixture is finished simmering, you can either transfer it into one or more large dishes or a bunch of individual portion dishes. I ended up getting one 8×8 dish (that I froze for another day), and 6 individual ramekins.

Top the beef with the mashed potatoes you prepared and some sharp white cheddar and bake at 350 degrees Fahrenheit for 20-30 minutes, or until the potatoes begin to brown on the top.
