I’ve been craving pancakes for the last few days but I’ve been hesitant because I didn’t want the big mess that pancakes bring.
This morning I decided to google ‘easy pancake recipes’ and came across a recipe on Cafe Delites. It was simple and delicious.
Ingredients
2 1/4 cups all purpose flour
1 tbsp. baking powder
2 cups milk (I’m not eating dairy, so I used Ripple dairy free pea beverage)
2 eggs
Coconut oil
Optional: chocolate chips, blueberries, any additional toppings, really.
Directions
Mix all ingredients together in a bowl until there are no lumps. I also added in some chocolate chips but those are optional.
Heat a pan over medium heat and add a tablespoon of coconut oil until melted. Add 1/4 cup of pancake mixture at a time and cook until bubbles form on the top. Flip and cook for an additional 30-45 seconds.
Enjoy with some butter (I used dairy free Earth Balance soy butter) and maple syrup!
