Perch Tacos

I had never had perch before I met my husband, who is from Port Stanley. Now that I am familiar with it, I love it so much! Every time we visit friends in Port we stop by the fish market to pick some up!

We had leftovers from frying it up for Brent’s birthday so I decided to try the leftovers in tacos!

To fry them all we do is make an assembly line with the perch, whisked eggs and ground up saltine crackers. First dip the perch in the egg and then in the crackers and then straight to the deep fryer!

They don’t take long to cook – maybe about 4-6 minutes.

For the tacos today all I did was reheat them in the oven preheated to 350 degrees for about 12-14 minutes.

I made a quick tartar sauce since I didn’t but have any in the fridge with equal parts mayonnaise and relish, a splash of lemon juice and salt and pepper to taste.

Ingredients:
fried perch filets
shredded lettuce
red onion
avocado
tartar Sauce
whole wheat tortillas (I browned mine in a pan with some garlic butter)

Directions:
To assemble the tacos, spread some tartar sauce all over the tortilla, top with fried perch, lettuce, onion and avocado. Add any other toppings of your choice!

These were super easy to make with the leftover fish and they were really tasty!
